I made this last night and served alongside a grilled rainbow trout filet. The guacamole salad recipe comes from the “Barefoot Contessa at Home” cookbook and once again, didn’t disappoint.
Summer in a bowl: Avocados, grape tomatoes, red onion, orange and yellow peppers, jalapenos, black beans, lime zest, lime juice, olive oil, salt, pepper, garlic, cayenne. Light, fresh and tasty!
