One of my life list items is to cook all recipes in a cookbook. I’m keeping track of this item on a separate page here. As of this past weekend, I have completed 40 of 90 recipes. I made Ina’s Creamy Cucumber Salad on Sunday and it was very good (as with all of Ina’s recipes). It was like tzatziki but with actual cucumbers and no garlic. Served cool, it was really very refreshing.
We enjoyed it for two separate meals:
On Sunday, I paired it with cod simply flavoured with lemon zest, lemon juice, salt and pepper. I also had some long grain and wild rice on the side. Served with a cold reisling. Refreshing, light, summery.
Tonight, I served it alongside tikka masala chicken and curried basmati rice. The cool cucumber/yogurt salad really went well with the spicy indian food.
