This was another good one. Now at 44 of 90 recipes completed from Ina’s (aka Barefoot Contessa) Back to Basics cookbook.
I love roasted tomatoes – they taste so much better than fresh, although I’m still a fan of fresh ones. Roasted ones that have been seasoned with olive oil, balsamic vinegar, garlic, sugar, salt and pepper…then slapped next to some slices of fresh mozzarella and sprinkled with julienned fresh basil leaves… Heaven.
