This was probably one of the best fish dishes I’ve ever made. I used tilapia instead of bass or halibut and it held up well in the recipe.
Holy moly – the roasted veggies (carrot, parsnips, potatoes and butternut squash) were awesome. Olive oil, salt and pepper.
The fish, wrapped in prosciutto and baked was awesome. Salt and pepper.
The rosemary-infused butter with lemon, drizzled over the fish once done, was awesome.
