Today was a productive cooking day and my total is now at 80 recipes of 90 complete! I’m so close to the end of my cookbook challenge!
This morning I made Homemade granola bars which were a great success. They contain oats, wheat germ, honey, sliced almonds, dates, dried apricots and dried cranberries. They’re chewy, natural and delicious!
I wrapped them individually in plastic wrap so they could be packed quickly for lunches during the week.
Displayed in the new cake dome I received for my birthday (thanks Mark and Chantal!).

Next up was White pizzas with arugula. I still can’t believe I made my own pizza dough with yeast. The recipe was for 6 small pizzas, so I halved the recipe and make two pizzas instead – it worked out well. once I got the dough going, I made the garlic oil (simmered olive oil, sliced garlic, thyme springs, red pepper flakes, salt and pepper in a pot on the stove). I prepared the cheese (the recipe called for fontina, mozzarella and goat cheese). I actually bought the honey goat cheese which ws tangy with a bit of sweetness. Awesome. Then, when the dough was ready, I assembled the pizzas.
Brushed with the oil, sprinkled with salt and pepper, covered with cheeses, drizzled with more oil, baked at 500 degrees for ten minutes. And they were done!
The recipe also called for an arugula salad to be placed on top of the white pizzas. It was a simple salad of olive oil, lemon juice, salt and pepper and it was perfect with the pizza.
This was one of the best pizzas I ever ate and the first white pizza I’ve ever had as well. It was delicious!
