For the past couple of weeks, I’ve been eyeing the squash selection at our grocery store. I ended up buying an acorn squash, found this recipe, and made it for lunch today served alongside chili-lime tilapia.
It was super easy to prepare, took about 20-25 minutes to bake and it was incredibly tasty and flavourful.
I was impressed!
And couldn’t help feeling slightly jipped at not having discovered this wonderful vegetable before now! So much catching up to do…
