I’ll be honest – I wanted to have a relaxed evening and was craving margaritas. So last night I decided to make this guacamole salad for dinner as a ruse – if I serve Mexican food, I can make margaritas as a perfect beverage pairing. See how clever that was? Really, I would have been perfectly happy with the pitcher and some tortilla chips, but a girl’s gotta eat a decent meal… 🙂 Slap a “salad” next to that pitcher and it’s like a well-planned Mexican-themed fiesta. Olé!!
I’ve made the salad recipe before and it’s very good – there are nice, fresh flavours, it’s very colourful and has lots of veggies. The jalapenos and cayenne give it a bit of zing – very tasty!
