I made this for lunch today. The recipe can be found here and it’s in the Barefoot Contessa’s How Easy Is That cookbook.

The dressing is a mix of Dijon mustard, whole grain mustard and mayo, vinegar (the recipe called for tarragon vinegar but I used white wine vinegar since that’s what I had), along with the chicken, broccoli, cherry tomatoes and fresh tarragon leaves. We ate it at room temp and we’re looking forward to having the rest for supper tomorrow once the flavours have blended some more.

Paired with a glass of Thirty Bench Riesling. Yum!

And I just noticed but the red of the tomatoes and green of the broccoli make this a festive Christmas dish. 🙂 Bonus.

Who would think hummus and tuna would go together? Well, the Barefoot Contessa did in her How Easy Is That cookbook. Pretty tasty indeed. I forgot to buy the radishes. The sourdough bread really works. Recipe is here.

I made Ina’s version of Croque Monsieurs for lunch today. It was from the Barefoot in Paris cookbook. They were rich and delicious. My husband, who grew up eating these, really enjoyed them. The recipe can be found here.

For lunch today, I made the Barefoot Contessa’s French Potato Salad (from the Barefoot Contessa Cookbook). Recipe is here.

The flavours are just fantastic in this otherwise simple potato salad – the fresh herbs (dill, basil, parsley), the vinaigrette (olive oil, white wine, Dijon, chicken stock, substitution of white wine vinegar for the champagne vinegar the recipe called for), scallions, salt and pepper and a mix of red and russet new potatoes. Fabulous.

This salad had very French flavours and it was wonderfully classic, refined and elegant.

That thought lasted all through lunch until dessert. Then, refined and elegant got tossed out the window in favour of Easter bunny chocolate that got dipped in a bowl of peanut butter.
